Ingredients
1 3/4 cup all-purpose flour
1 tsp baking powder
1/4 tsp salt
2/3 cup granulated sugar
1/2 cup melted butter
1 large egg
1 cup Greek yogurt
1/4 cup fresh orange juice
2 tbsp fresh orange zest
1 tsp pure vanilla extract
Instructions
Preheat your oven to 350 degrees Fahrenheit.
Line a standard muffin tin with paper liners and spray them lightly with nonstick cooking spray.
Whisk the flour, baking powder, salt, and sugar together in a medium-sized mixing bowl until combined.
Add the melted butter, egg, yogurt, orange juice, zest, and vanilla to the dry mixture.
Mix the batter until just combined, ensuring not to overwork the dough.
Divide the batter evenly into the prepared muffin tin.
Bake for 15 minutes or until a toothpick inserted into the center comes out clean.
Allow to cool in the pan for 5 minutes before transferring to a wire rack.
Notes
Ensure your butter is slightly cooled before mixing to avoid cooking the egg prematurely. If you do not have Greek yogurt, sour cream makes an excellent substitute. Using freshly squeezed orange juice provides the most authentic flavor compared to bottled varieties.
