Ingredients

Chopped peaches (2½ cups), use 15½ oz canned drained
Vegetarian or halal-certified peach/apricicot gelatin (6 oz)
Sugar (¼ cup)
Boiling water (2 cups)
Non-alcoholic almond extract (½ tsp)
Whipped topping (8 oz), non-dairy option
Garnish: Chopped peaches or cherry tomatoes (2 tbsp)


Instructions

Apply non-stick spray to a 6-cup mold or bundt pan; line with plastic wrap
Whisk gelatin and sugar into boiling water until dissolved. Chill 10–15 minutes to thicken
Add almond extract to whipped topping. Fold into gelatin mixture until fully incorporated
Fold in chilled peaches gently
Pour into prepared mold. Refrigerate at least 4 hours or overnight for best results
Run a knife around the mold edge. Invert onto a serving platter. Add peaches or cherry tomatoes as garnish

Notes

Use room-temperature whipped topping to prevent gelatin from becoming runny
Cool gelatin to 40°F (4°C) before folding for stability
Optional: Substitute peaches with cherries or other fruits for variety
