Canola oil 1/2 cup
1 large egg, room temperature
1 tsp real vanilla extract
2 1/4 cups all-purpose flour
1 tsp baking powder
1/2 tsp salt
2 cups chopped fresh peaches (unpeeled)
4 tbsp unsalted butter, softened (for glaze)
3/4 cup light brown sugar (packed)
1 tsp all-purpose flour (for glaze)
Instructions
Preheat oven to 350°F (180°C).
Whisk granulated sugar, milk, canola oil, egg, and vanilla extract until smooth.
Mix in flour, baking powder, and salt until just combined.
Fold in chopped peaches gently.

Bake for 55 minutes until golden and a toothpick inserted in center comes out clean.
Meanwhile, prepare glaze by melting butter, mixing with brown sugar and flour.
Brush glaze over warm bread before slicing and serving.
Notes
Can reduce sugar to 1/2 cup for less sweet.
Use almond or oat milk for dairy-free option.
Can use vegetable or melted coconut oil instead of canola oil.
Egg should be room temperature for better emulsion.
Recipe is highly customizable—add cinnamon or swap in other stone fruits like pears in winter.
Store in airtight container for up to 3 days.
Freeze slices for longer storage.
Glaze can be omitted for a less sweet version.
