Ingredients
5 fresh peaches, peeled and cored (4 cups)
1¾ cups granulated sugar (350g; use coconut sugar for lower glycemic index)
½ tsp salt (enhances fruit sweetness)
6 tbsp (85g) butter, softened; use dairy-free margarine for vegan option
1 cup (120g) all-purpose flour; substitute almond flour for grain-free
¾ cup (180ml) milk; non-dairy alternatives work well
Ground cinnamon (optional; substitute cardamom for spice variation)
Instructions
Add sliced peaches, ¾ cup sugar, and ¼ tsp salt to a saucepan
Cook on medium heat until sugar dissolves (3–4 minutes), then remove from heat
Preheat oven to 350°F and place butter in a 9×13″ baking dish
Insert the dish in the oven during preheating to melt the butter (5 minutes)
Combine flour, remaining 1 cup sugar, baking powder (1 tsp), and remaining ¼ tsp salt in a bowl
Stir in milk until just mixed (batter will be lumpy)
Pour batter over melted butter in the dish, spreading evenly
Spoon hot peach mixture over the batter; sprinkle with cinnamon
Bake for 38–40 minutes until golden; cool 10 minutes before serving
