5 medium peaches, peeled, cored, sliced (about 4 cups or 600-700g)
3/4 cup (150 g) granulated sugar (for peaches)
1/4 teaspoon salt (for peaches)
6 Tablespoons (85 g) unsalted butter
1 cup (120 g) all-purpose flour
1 cup (200 g) granulated sugar (for batter)
2 teaspoons baking powder
1/2 teaspoon salt (for batter)
1 cup (240 ml) milk
1 teaspoon vanilla extract


Instructions

Preheat your oven to 375°F (190°C).
In a bowl, toss the sliced peaches with 3/4 cup sugar and 1/4 teaspoon salt. Let them sit while you prepare the batter.
Melt the butter in a 9×13 inch baking dish or a similar sized oven-safe skillet. Place the dish in the preheating oven for a few minutes to warm the butter.
In a separate bowl, whisk together the flour, 1 cup sugar, 2 teaspoons baking powder, and 1/2 teaspoon salt.
Whisk in the milk and vanilla extract until just combined. Do not overmix; a few lumps are okay.
Carefully remove the hot baking dish from the oven (the butter should be melted and hot). Pour the batter evenly over the melted butter in the dish. Do not stir.
Spoon the sweetened peach slices evenly over the batter.
Bake for 35-45 minutes, or until the topping is golden brown and a toothpick inserted into the cakey part comes out clean.
Let it cool for at least 10-15 minutes before serving.

Notes

For canned peaches, drain them well and reduce the sugar for the peaches to 1/4 cup. For frozen peaches, do not thaw completely; toss with sugar and salt, and you may need to bake a few minutes longer. Serve warm, perhaps with a scoop of vanilla ice cream or a dollop of whipped cream.
