Ingredients
1 1/3 cups all-purpose flour
1 Tbsp granulated sugar (crust) +1/4 cup (filling)
1/2 tsp fine sea salt
8 Tbsp unsalted butter (dough) +1/2 Tbsp (filling), cold and cubed
6 Tbsp ice water
1 beaten egg (crust wash)
1 Tbsp coarse sugar (topping)
Instructions
Pulse flour, sugar, and salt in a food processor
Add cold butter cubes, pulse 8-10 times
Drizzle in ice water 1 Tbsp at a time, continuing to pulse
Form dough into a disk, chill for 30 minutes
For filling, toss sliced peaches with sugar, flour, and cinnamon
Roll chilled dough to 12″ on a floured surface
Arrange peaches in a spiral pattern, dot with cold butter
Brush with egg wash, sprinkle with coarse sugar
Bake at 375°F for 25-30 minutes until golden and bubbly
