Ingredients
1 cup mashed ripe bananas
1/2 cup creamy or crunchy peanut butter
1/4 cup brown sugar
1/4 cup unsweetened applesauce
1/2 cup almond milk
2.5 cups old-fashioned oats
1 tsp baking powder
1/2 tsp salt
1 tsp cinnamon
1 tsp vanilla extract
1 cup chocolate chips
Instructions
Preheat your oven to 350°F (177°C) and line a 9-inch square baking pan with parchment paper.
In a large bowl, whisk together the mashed bananas, peanut butter, brown sugar, applesauce, almond milk, and vanilla extract until smooth.
Add the old-fashioned oats, baking powder, salt, and cinnamon to the wet mixture, stirring until well combined.
Fold in the chocolate chips gently.
Pour the batter into the prepared baking pan, spreading it evenly with a spatula.
Bake for 25 minutes or until the edges are golden and the center is set.
Remove from the oven and allow the bars to cool completely in the pan before lifting out with the parchment overhang to slice.
Notes
Ensure you use old-fashioned rolled oats rather than instant oats to maintain the structural integrity of the bars. Store in an airtight container at room temperature for up to 3 days or refrigerate for up to a week. You can use dairy-free chocolate chips to keep this recipe vegan-friendly.
