Ingredients
190 g all-purpose flour
3 g fine salt
15 g granulated sugar
115 g unsalted butter, cubed and cold
45–60 ml ice water
200 g pecan halves
150 g light brown sugar, packed
120 ml light corn syrup
3 large eggs, room temperature
60 g unsalted butter, melted and cooled
10 ml vanilla extract
1 g cinnamon
Instructions
Whisk flour, salt, and granulated sugar together in a bowl.
Cut in the cold cubed butter until the mixture resembles coarse crumbs.
Gradually add ice water, mixing until the dough just holds together.
Form into a disk, wrap, and chill for at least 1 hour.
Roll out the dough on a floured surface and fit into a pie dish.
Toast the pecan halves lightly in a pan or oven until fragrant.
In a large bowl, whisk together brown sugar, corn syrup, eggs, melted butter, vanilla, and cinnamon.
Stir in the toasted pecans.
Pour the filling into the prepared pie shell.
Bake at 350°F (175°C) for 50-60 minutes until set.
Cool completely for at least 2 hours before serving.
Notes
Ensure the butter for the crust remains very cold to achieve a flaky texture. Do not overmix the filling to keep the custard smooth. The pie is done when the edges are set but the center has a slight wobble.
