Description

This iconic, retro-style Pineapple Upside Down Cake is a beloved dessert featuring a luscious, caramelized pineapple and cherry topping over a tender, buttery sponge. It is an incredibly reliable, family-friendly treat that is simple to prepare for weeknight comfort or celebratory occasions. By alternating liquid and dry ingredients, you achieve a light, airy crumb that stays moist and flavorful, making it a perfect staple for any home baker looking for a scratch-made bakery result without the hassle.

Ingredients

Scale

4 Tbsp Unsalted Butter (melted for topping)
2/3 cup Brown Sugar (packed)
1 can (20 oz) Pineapple Rings (drained, reserve juice)
8–10 Maraschino Cherries (stemless)
1 1/2 cups All-Purpose Flour
1 1/2 tsp Baking Powder
1/4 tsp Salt
1/2 cup Unsalted Butter (softened)
3/4 cup Granulated Sugar
2 Eggs (room temperature)
1 tsp Vanilla Extract
1/2 cup Milk

Instructions

Preheat your oven to 350°F.
Pour 4 tablespoons of melted butter into a 9-inch round cake pan.
Sprinkle the brown sugar evenly over the melted butter to cover the base.
Arrange pineapple rings in the pan and place a cherry in the center of each ring.
In a medium bowl, whisk together the flour, baking powder, and salt.
In a separate large bowl, cream the softened butter and granulated sugar until light and fluffy.
Beat in the eggs one at a time, followed by the vanilla extract.
Gradually add the dry ingredients to the butter mixture, alternating with the milk and 2-3 tablespoons of reserved pineapple juice.
Pour the batter gently over the pineapple and cherries, spreading evenly.
Bake for 45 minutes or until a toothpick inserted into the center comes out clean.
Cool for 10 minutes in the pan before inverting onto a serving plate.

Notes

Ensure your butter and eggs are at room temperature to ensure proper emulsification of the batter. Use a metal pan for the most even caramelization of the pineapple topping. Store leftovers in an airtight container at room temperature for up to 3 days.
