Ingredients
4 large russet potatoes, diced
2 tablespoons olive oil
1 pound ground beef
1 tablespoon taco seasoning
1 teaspoon garlic powder
1 teaspoon onion powder
1 cup drained black beans
1 cup corn kernels, thawed
1 cup cherry tomatoes, halved
1 cup shredded lettuce
1 cup cheddar cheese
1 avocado, sliced
1/2 cup sour cream
2 tablespoons chopped cilantro
Instructions
Preheat oven to 425°F
Toss diced potatoes with olive oil and season with salt
Spread potatoes on a lined baking sheet and roast 35 minutes, flipping halfway through while the beef mixture cooks
Break up ground beef in skillet, cook until browned
Stir in taco seasoning, garlic powder, and onion powder
Add black beans and corn, simmer briefly
