Description

Ingredients
1½ cups (180g) all-purpose flour
½ teaspoon salt
½ teaspoon baking powder
½ cup (113g) unsalted butter, room temperature
1½ cups (300g) granulated sugar
4 large eggs, room temperature
½ cup (120g) sour cream, room temperature
2 teaspoons non-alcoholic vanilla extract (vanilla essence)
Instructions
Preheat oven to 350°F (175°C)
Grease a 9×5″ loaf pan with butter and dust with flour
In a stand mixer, beat butter on medium speed for 2 minutes
Add sugar gradually while beating
Add eggs one at a time, beating well after each addition
Mix in non-alcoholic vanilla extract
Alternately add flour (½ cup at a time) and sour cream (¼ cup at a time) until fully incorporated
Scrape batter into prepared pan
Bake for 65 minutes or until golden and toothpick comes out clean
Cool completely before serving
Notes
Use a non-metallic loaf pan for even baking
For extra moisture, brush top with melted butter before baking
Store in an airtight container at room temperature for 2-3 days
