The use of melted butter ensures a decadent texture, making these squares an ideal, family-friendly treat for any gathering or busy weeknight craving.
Ingredients
2 cups all-purpose flour
1 tsp baking soda
3/4 tsp salt
2 tsp ground cinnamon
1/2 tsp ground nutmeg
1/4 tsp ground ginger
1/8 tsp ground cloves
1 cup unsalted butter, melted and cooled
1 cup light brown sugar, packed
1/2 cup granulated sugar
15 oz pumpkin puree
2 large eggs
2 tsp vanilla extract
Instructions
Preheat your oven to 350°F and coat a 15 x 10-inch jellyroll pan with non-stick spray.
Whisk the flour, baking soda, salt, cinnamon, nutmeg, ginger, and cloves together in a medium bowl.
Melt the butter in a large microwave-safe bowl and allow it to cool slightly.
Whisk both sugars, pumpkin puree, eggs, and vanilla into the melted butter until the mixture is smooth.
Fold the flour mixture into the wet ingredients until just combined.
Spread the batter evenly into the prepared pan.
Bake for 20-25 minutes until a toothpick comes out clean.
Allow to cool completely before applying cream cheese frosting.
Notes
Ensure your pumpkin puree is plain 100% pumpkin and not pumpkin pie filling. To keep the bars moist for days, store them in an airtight container in the refrigerator once frosted. You can garnish with extra cinnamon or chopped walnuts if desired.
