Ingredients
1 1/4 cups Unsalted Butter
3/4 cup Pumpkin Puree
2 1/2 cups + 2 tbsp All-Purpose Flour
1 1/2 tbsp Pumpkin Pie Spice
3/4 tsp Baking Soda
3/4 tsp Baking Powder
3/4 tsp Salt
1 1/2 cups Light Brown Sugar
3 large Egg Yolks
1 tbsp Pure Vanilla Extract
1/2 cup White Chocolate Chips
2 tbsp Granulated Sugar
Instructions
Preheat your oven to 350 degrees Fahrenheit.
Spray a 9×9 inch square pan with non-stick spray and line the bottom with parchment paper.
Heat butter in a medium pot over medium heat until it melts and begins to simmer.
Simmer butter for approximately 5 minutes until golden and nutty, then remove from heat to cool.
Place pumpkin puree in a skillet over medium heat, stirring until excess moisture evaporates and it thickens slightly.
In a medium bowl, whisk together flour, pumpkin spice, baking soda, baking powder, and salt.
In a large bowl, whisk cooled brown butter with brown sugar, egg yolks, and vanilla extract until smooth.
Fold the thickened pumpkin puree into the butter mixture.
Gradually add the dry ingredients to the wet, mixing until just combined.
Fold in the white chocolate chips.
Spread the batter into the prepared pan and sprinkle the top with granulated sugar.
Bake for 28 minutes or until a toothpick inserted into the center comes out mostly clean.
Cool completely in the pan before cutting into squares.
Notes
Ensure the butter is cooled to room temperature before adding the eggs to prevent them from scrambling. Drying the pumpkin puree in a skillet is the key step to achieving the signature chewy texture instead of a cakey one. Store in an airtight container at room temperature for up to 3 days.
