Description

These Pumpkin Cheesecake Bars are the ultimate fall dessert, featuring a buttery graham cracker crust topped with a velvety, spiced pumpkin cream cheese filling. This refined, elegant treat offers a perfect harmony of creamy tang and warm autumn spices, making it a reliable and crowd-pleasing dessert for special gatherings or relaxing weekends at home.

Ingredients

Scale

15 whole graham crackers (pulverized into crumbs)
3/4 cup granulated sugar (for crust)
1 cup granulated sugar (for filling)
8 tablespoons unsalted butter (melted and cooled)
1 1/4 cups pumpkin puree (not pie mix)
1 1/2 teaspoons pumpkin pie spice
1 1/2 teaspoons ground cinnamon
24 ounces cream cheese (room temperature)
1/2 cup sour cream (full fat)
3 large eggs (room temperature)
1 tablespoon all-purpose flour

Instructions

Preheat oven to 350°F and line a 9×13 pan with foil.
Pulse graham crackers into fine crumbs, combine with 3/4 cup sugar and melted butter, then press into the pan.
Bake crust for 10-15 minutes and let cool.
In a large bowl, beat room temperature cream cheese and 1 cup sugar until smooth.
Add sour cream and beat until combined, then add eggs one by one on low speed.
Remove 1/3 of the batter and mix with pumpkin puree, spices, and flour.
Pour plain cheesecake batter over the cooled crust, then dollop the pumpkin mixture on top.
Use a knife to gently swirl the mixtures to create a marbled pattern.
Bake for 40-45 minutes until the centers are set but slightly jiggly.
Cool completely at room temperature, then chill in the refrigerator for at least 4 hours before slicing.

Notes

Ensure ingredients like cream cheese and eggs are at room temperature to obtain a smooth, lump-free batter. Do not overmix the batter once the eggs are added to prevent air bubbles, which can cause cracking. Store leftover bars in an airtight container in the refrigerator for up to 5 days.
