12 tbsp unsalted butter, softened
2 cups all-purpose flour
1 tsp ground cinnamon
1/2 tsp ground ginger
1/2 tsp ground nutmeg
1/4 tsp ground allspice
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1 1/2 cups granulated sugar
3 large eggs
1 1/2 cups pumpkin purée
1 cup semisweet chocolate chips
1 cup chopped pecans
2 1/2 cups confectioners’ sugar
8 tbsp unsalted butter (for frosting)
10 oz bittersweet chocolate, melted
1 tsp vanilla extract
Instructions
Preheat oven to 350 degrees F (175 degrees C) and grease a cake pan.
In a large bowl, whisk together flour, cinnamon, ginger, nutmeg, allspice, baking soda, baking powder, and salt.
In a separate bowl, cream 12 tbsp of butter with granulated sugar until fluffy.
Beat in the eggs one at a time, followed by the pumpkin purée.
Gradually stir the dry ingredients into the wet mixture until just combined.
Fold in the chocolate chips and chopped pecans.
Pour the batter into the prepared pan and bake for 35 minutes or until a toothpick comes out clean.
Allow the cake to cool completely before frosting.
To make the frosting, beat the remaining 8 tbsp of butter with confectioners’ sugar, vanilla extract, and melted chocolate until smooth and creamy.
Spread the frosting evenly over the cooled cake.
Notes
Ensure all ingredients are at room temperature for the best emulsion. Toast the pecans in a dry pan over medium heat for 3-5 minutes before adding to the batter to enhance their nutty flavor. Store the cake in an airtight container at room temperature for up to 3 days.
