1 loaf stale bread (challah or brioche), cubed
6 large eggs
1 ½ cups heavy cream
1 cup canned pumpkin puree
½ cup brown sugar, packed
¼ cup maple syrup
1 teaspoon vanilla extract
2 teaspoons pumpkin pie spice
½ teaspoon ground cinnamon
¼ teaspoon salt


Instructions

Prepare your baking dish. Lightly grease a 9×13 inch pan. Set it aside for later use.
Cube the bread. Cut your chosen loaf into 1-inch pieces. Distribute these cubes evenly in the prepared dish.
Whisk the liquid ingredients. In a large bowl, combine the eggs, heavy cream, and pumpkin puree. Add brown sugar and maple syrup.
Incorporate the spices. Stir in the pumpkin pie spice, ground cinnamon, and salt. Mix until everything is well combined.
Pour over the bread. Gently pour the custardy mixture over the bread cubes. Ensure all pieces are coated.
Allow it to soak. Cover the dish and refrigerate for at least 4 hours. Overnight soaking is even better.
Preheat the oven. Before cooking, preheat your oven to 375°F (190°C). Remove the dish from the refrigerator.
Cook the casserole. Place the uncovered dish in the preheated oven. Cook for 35-45 minutes.
Check for doneness. The top should be golden brown. The center should be set.
