1 large egg, well beaten
2 cups almond flour, finely ground
3/4 cup granulated sugar-free sweetener, divided
1 pinch sea salt
15 oz pure pumpkin puree
1 cup full-fat canned coconut milk
1 tsp pure vanilla extract
1 1/2 tsp pumpkin pie spice


Instructions

Preheat your oven to 350 degrees Fahrenheit and line a 9-inch square baking pan with parchment paper.
Combine the melted coconut oil and beaten egg in a large mixing bowl until the mixture is uniform.
Stir in the almond flour, 1/4 cup of the sweetener, and the sea salt until a crumbly dough forms.
Press the dough evenly into the prepared pan to create the crust base.
Poke the crust surface with a fork and bake for 15 minutes until golden.
In a separate bowl, whisk together the pumpkin puree, coconut milk, remaining sweetener, vanilla extract, and pumpkin pie spice until smooth.
