1 tsp baking soda
1 tsp cream of tartar

2 tsp pumpkin pie spice
2 tsp ground cinnamon


Instructions

In a large bowl, cream together the softened butter, granulated sugar, and light brown sugar until smooth.
Add the pumpkin puree, egg, and vanilla extract, beating until well combined.
In a separate bowl, whisk together the flour, baking soda, cream of tartar, salt, and pumpkin pie spice.
Gradually add the dry ingredients to the wet mixture, stirring until just incorporated.
Cover the dough and refrigerate for 1 hour to allow the moisture to set.
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a small bowl, mix together the remaining granulated sugar and cinnamon.
Scoop the chilled dough into balls, roll each ball in the cinnamon-sugar mixture, and place on the prepared sheet.
