2 cups (256g) All-Purpose Flour
1 tsp Baking Soda
1 tsp Cream of Tartar
1/2 tsp Sea Salt
2 tsp Pumpkin Pie Spice
2 tsp Ground Cinnamon


Instructions

Beat the softened butter, 1/4 cup granulated sugar, and brown sugar together in a large bowl until light and fluffy.
Mix in the pumpkin puree, egg, and vanilla extract until smooth.
In a separate bowl, whisk together flour, baking soda, cream of tartar, salt, and pumpkin pie spice.
Gradually add the dry ingredients to the wet ingredients and mix until just combined.
Cover and refrigerate the dough for at least 1 hour.
