Ingredients
Avocado oil cooking spray as needed
1/2 cup pecans
1/2 cup coconut oil, melted
4 ounces cream cheese, softened
1/2 cup pumpkin puree
1/4 cup golden monk fruit sweetener
2 teaspoons pumpkin pie spice
1/4 teaspoon cinnamon
Instructions
Heat a small pan over medium heat and lightly coat with avocado oil spray.
Toast the pecans while stirring frequently until golden and fragrant, then set aside to cool.
Melt the coconut oil in a pot over medium-low heat.
Add softened cream cheese to the pot and whisk until fully incorporated with the oil.
Stir in the pumpkin puree, monk fruit, and pumpkin pie spice until smooth.
Fold in the toasted pecans.
Pour the mixture into a silicone mold or small containers and freeze for 4 hours until firm.
Dust with cinnamon before serving.
Notes
Ensure you use pure pumpkin puree, not pre-sweetened pumpkin pie mix. You can substitute the monk fruit with powdered erythritol if preferred. Keep stored in the freezer until just before serving for the best texture.
