Ingredients
1/2 cup unsalted butter, softened
3/4 cup granulated sugar (for dough)
1/4 cup granulated sugar (for flattening)
1/2 cup pumpkin puree, blotted
1 large egg
1 tsp vanilla extract
2 cups all-purpose flour
1 tsp baking powder
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 tsp salt
Instructions
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
Beat the softened butter and 3/4 cup of sugar in a large bowl until light and fluffy.
Mix in the blotted pumpkin puree, egg, and vanilla extract until smooth.
In a separate bowl, whisk together the flour, baking powder, cinnamon, nutmeg, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Scoop dough into balls and roll in the remaining 1/4 cup sugar.
Place on the baking sheet and flatten slightly.
Bake for 12 minutes until the edges are set.
Cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
Ensure your pumpkin puree is blotted thoroughly with paper towels to prevent the dough from becoming too wet. You can add a simple vanilla-powdered sugar glaze once cooled for an extra festive finish. Store in an airtight container for up to 5 days.
