Description

Indulge in these aromatic pumpkin waffles, a cozy breakfast staple perfect for crisp autumn mornings. These waffles are designed to be fluffy on the inside with a satisfyingly crisp exterior. Featuring a warm blend of cinnamon, ginger, and pumpkin pie spice, this family-friendly recipe is a versatile base that pairs beautifully with maple syrup or your favorite seasonal toppings. It is a reliable, comforting dish that brings a touch of warmth to any weekend brunch or busy weekday morning.

Ingredients

Scale

2 cups + 2 Tbsp all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
2 teaspoons ground cinnamon
1.5 teaspoons pumpkin pie spice
1/4 teaspoon ground ginger
1/4 teaspoon salt
3 large eggs, room temperature
1 cup pumpkin puree (canned, not pie filling)
1/4 cup unsalted butter, melted and cooled
1/4 cup brown sugar, packed
1/4 cup pure maple syrup
1 teaspoon vanilla extract
1.5 cups whole milk, room temperature

Instructions

Preheat your waffle maker to medium-high heat.
Preheat your oven to 200°F to keep cooked waffles warm.
In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, pumpkin pie spice, ginger, and salt.
In a separate medium-sized bowl, whisk the room-temperature eggs, pumpkin puree, melted butter, brown sugar, maple syrup, vanilla, and milk until smooth.
Pour the wet ingredients into the dry ingredients and stir until just combined; do not over-mix.
Lightly grease your waffle iron with non-stick spray or a bit of oil.
Pour the appropriate amount of batter onto the iron and cook until golden brown and crispy, according to your waffle maker’s instructions.
Transfer cooked waffles to the preheated oven to stay warm while you finish the remaining batter.

Notes

Ensure ingredients like milk and eggs are at room temperature to create a smooth, cohesive batter that cooks evenly. Spoon and level your flour properly to avoid dense waffles. If you prefer a crunchier waffle, let the steam release for a few seconds longer before opening the iron.
