Ingredients

Vegetable oil 2 TBS
Granulated sugar 1/3 cup
Brown sugar 1/3 cup
Eggs 2
Vanilla extract 2 tsp
All-purpose flour 2 cups
Baking powder 1 ½ tsp
Baking soda ½ tsp
Salt ¼ tsp
Nutmeg ¼ tsp
Buttermilk ¾ cup
Powdered sugar 1 cup
Water 12 TBS


Instructions

Preheat oven to 350°F. Spray donut pan with coconut oil
In bowl mix oil, granulated sugar, brown sugar, melted butter until smooth
Add eggs and vanilla; whisk until combined
In separate bowl whisk flour, baking powder, baking soda, salt, nutmeg
Portion half the flour mix into wet ingredients; stir until wet ingredients disappear
Add buttermilk and stir until just combined
Incorporate remaining flour mix, stirring until barely blended
Fill donut molds 3/4 full
Bake 12 minutes until golden
Cool completely
Mix powdered sugar and water for glaze
Drizzle over donuts while glaze is wet

Notes

Use food coloring in batter for rainbow hues
Substitute oat flour for all-purpose flour
Coconut oil works as a vegan-friendly alternative
Adjust glaze water to desired thickness
