Ingredients

9 cups popped popcorn (plain microwave popcorn)
1.5 cups sugar (or sugar alternative)
6 tsp water
Gel food coloring (red, orange, yellow, green, blue, purple)
1.5 tsp salt (for flavor balance)


Instructions

Prepare 6 ziplock bags and add 3 tbsp sugar to each.
Add gel food coloring drops to each bag for the desired rainbow hues.
Seal bags and shake until coloring is fully mixed into sugar.
Heat 1 color’s sugar mixture with 1 tsp water in a small saucepan, stirring until dissolved.
Off heat, combine 1½ cups popcorn with the melted sugar mixture and toss to coat.
Spread coated popcorn on a parchment-lined baking sheet.
Repeat process for all 6 colors, working quickly to prevent sugar from hardening.

Use gel food coloring for vibrant colors.
Work quickly with sugar mixtures, as they harden fast when cooled.
Separate popcorn clumps immediately for even coating.
