3/4 cup unsalted butter, softened
3/4 cup light or dark brown sugar, packed
1/4 cup granulated sugar
1 large egg, room temperature
2 tsp pure vanilla extract
2 cups all-purpose flour
2 tsp cornstarch
1 tsp baking soda
1/2 tsp fine sea salt
1 1/4 cups semi-sweet chocolate chips, divided
12 regular marshmallows, cut in half
4 oz semi-sweet chocolate bar, finely chopped
1/3 cup graham cracker crumbs


Instructions

In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
Beat in the egg and vanilla extract until well combined.
In a separate bowl, whisk together the flour, cornstarch, baking soda, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Fold in the chopped chocolate bar and 3/4 cup of the chocolate chips.
Chill the dough for at least 1 hour to allow flavors to meld and prevent over-spreading.
Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
Scoop dough into balls and place on the sheet, slightly flattening the centers.
Bake for 10-12 minutes until edges are set.
Remove from oven, press marshmallow halves onto the top of each cookie, and sprinkle with graham cracker crumbs and remaining chocolate chips.
Switch oven to broil and place cookies back in for 30-60 seconds to toast the marshmallows, watching closely to prevent burning.
