Ingredients
3/4 cup granulated sugar
1/2 cup milk
1/2 cup oil
1 large egg
1 tsp vanilla or almond extract
2 1/4 cups all-purpose flour
2 tsp baking powder
1/2 tsp salt
2 1/3 cups diced strawberries
2 cups powdered sugar
1–2 tbsp heavy cream or milk
Instructions
Preheat oven to 350°F
Whisk sugar, milk, oil, egg, and vanilla in a medium bowl
Combine flour, baking powder, and salt in a separate bowl
Add dry ingredients to wet mixture, stirring until just combined
Toss diced strawberries with 2 tbsp flour in a small bowl
Fold floured berries into batter until evenly distributed
Pour batter into a greased 9×5-inch loaf pan
Bake for 55 minutes until golden and a toothpick comes out clean
Let cool slightly
Whisk powdered sugar and cream/milk until smooth for glaze
Drizzle glaze over bread and let set
