Soft, tender quick bread loaded with juicy strawberries and a sweet glaze. A customizable, easy-to-make comfort food perfect for breakfasts or snacks.
Ingredients
2 cups all-purpose flour
¾ cup granulated sugar
½ cup whole milk (or almond/oat milk)
½ cup vegetable oil (or canola/coconut oil)
1 large egg (or vegan egg substitute: ¼ cup soy milk + 1 tsp baking powder)
1½ tsp vanilla extract
1½ tsp baking powder
¼ tsp salt
3 cups chopped strawberries (tossed with 1–2 tbsp flour to prevent sogginess)
Glaze: ½ cup powdered sugar, 1–2 tbsp milk or strawberry puree
Instructions
Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan.
In a bowl, mix flour, sugar, baking powder, and salt.
Whisk milk, oil, egg, and vanilla. Gradually add to dry ingredients.
Fold in coated strawberries. Pour batter into the prepared pan.
Bake for 55–60 minutes or until golden and a toothpick comes out clean.
Cool, then mix glaze ingredients to a spreading consistency and drizzle over slices.
Notes
Freeze strawberries if fresh ones aren’t available.
Substitute applesauce for oil to reduce fat.
Omit glaze for a lighter version.
Use oat flour for gluten-free baking.
Bread stays fresh in a sealed container for 4 days.
