A tender, buttery bread studded with fresh strawberries and a sweet-tart glaze, inspired by a 1940s family recipe. Perfect for weeknights or picnics, this no-fuss loaf is adaptable to vegan and alternative flavor profiles.
Ingredients
3/4 cup granulated sugar
1/2 cup 2% milk
1/2 cup oil (canola or coconut, solid at room temperature)
1 large egg
1 tsp vanilla or almond extract
2 1/4 cups all-purpose flour
2 tsp baking powder
1/2 tsp salt
2 cups diced strawberries
2 cups powdered sugar
2 tbsp melted butter (or coconut oil for vegan)
Instructions
Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
In a large bowl, whisk together egg, milk, oil, sugar, and extract.
Add dry ingredients (flour, baking powder, salt) and stir until combined.
Gently fold in strawberries (2 tbsp flour first coats berries to prevent sinking).
Transfer batter to prepared pan. Bake 55-60 minutes until golden.
Cool completely. Glaze with powdered sugar and melted butter/ oil while warm.
