These Tater Tot Nachos are a quick and flavorful meal perfect for family dinners or casual gatherings. Crispy tater tots form a hearty base, topped with seasoned ground beef (or lentils), black beans, cheese, and fresh toppings for a delicious Tex-Mex twist. Ready in 50 minutes.
Ingredients
32 oz Tater Tots
1 lb ground beef
1 oz taco seasoning
15 oz black beans, drained and rinsed
2 cups cheddar cheese, shredded
2 Roma tomatoes, chopped
1 jalapeno or serrano pepper
Instructions
Preheat oven to 425°F (220°C)
Spread Tater Tots in a 9×13″ baking dish
In a skillet, cook ground beef for 7-10 minutes
Drain excess fat from the beef
Add taco seasoning and 1/4 cup water to the beef; cook for 2-3 minutes until thickened
Layer the seasoned beef over the Tater Tots
Spread the drained black beans evenly over the beef
Sprinkle 1 1/2 cups cheese over the layers
Bake for 25-30 minutes until golden and bubbly
Let rest for 5 minutes before adding toppings
Top with chopped tomatoes, peppers, and any optional toppings like cilantro, avocado, or sour cream

For a vegan version, substitute ground beef with lentils.
Use Mexican blend cheese for a more robust flavor.
