1/2 cup vegetable oil
2 large eggs
1 cup buttermilk
1 cup hot freshly brewed coffee
1 tsp vanilla extract


Instructions

Preheat oven to 350°F (177°C) and prepare two 9-inch pans by greasing them and lining with parchment paper.
Whisk the flour, cocoa, sugar, baking soda, baking powder, salt, and espresso powder in a large bowl until well combined.
In a separate bowl, mix the oil, eggs, and vanilla extract until fully incorporated.
Slowly combine the dry ingredients with the wet mixture while mixing.
Slowly pour in the hot coffee while mixing gently to avoid splashing, stirring until the batter is smooth and thin.
Divide the batter equally between the two prepared pans.
Bake for 23–26 minutes, or until a toothpick inserted into the center comes out clean.
Cool the cakes in the pans for one hour, then carefully remove them to a wire rack to cool completely before frosting.
