Ingredients
All-purpose flour 2 cups
Granulated sugar 1/2 cup
Light brown sugar 1/4 cup
Baking soda 1 teaspoon
Salt 1/2 teaspoon
Ripe bananas 3 very ripe, mashed to 1 ½ cups
Greek yogurt 1/4 cup
Eggs 2 large
Vegetable oil 1/4 cup
Vanilla extract 2 1/2 teaspoons
Nuts/Chocolate chips 1 cup
Instructions
Preheat oven to 350°F (180°C). Line a 9-inch loaf pan with parchment paper
Whisk dry ingredients in a large bowl
Add mashed bananas, yogurt, eggs, oil, and vanilla extract
Pour batter into prepared pan and smooth top
Sprinkle nuts or chocolate chips on top
Bake for 1 hour
Cool in pan for 10 minutes before slicing
Notes
Use room-temperature mashed bananas for smooth batter
Use whole wheat flour for a denser texture
Store in an airtight container for up to 2 days
