Ingredients
All-purpose flour 1 3/4 cups
Baking powder 1 tsp
Baking soda 1/2 tsp
Salt 1/2 tsp
Ground cinnamon 1 tsp
Ground nutmeg 1/2 tsp
Vegetable oil 1/2 cup (or coconut oil)
Shredded zucchini 1 1/2 cups
Granulated sugar 1 cup
Brown sugar 1 cup
Large eggs 2
Applesauce 1/4 cup
Vanilla extract 1 tsp
Chocolate chips 1 cup (optional)
Chopped nuts 1/2 cup (optional, for vegan)
Coconut oil (for greasing pan)
Instructions
Preheat oven to 350°F (177°C) and grease a 9×5-inch loaf pan.
Whisk flour, baking powder, baking soda, salt, cinnamon, and nutmeg in a large bowl until blended.
In a medium bowl, whisk oil, granulated sugar, brown sugar, eggs, applesauce, and vanilla extract until smooth.
Add zucchini to wet ingredients and stir gently to combine.
Pour wet mixture into dry ingredients and stir just until combined.
Fold in chocolate chips or chopped nuts if using.
Spread batter into prepared pan and bake for 55-70 minutes. Cover halfway through to prevent overbrowning.
Test doneness with a toothpick—it should come out mostly clean.
Cool in pan for 1 hour, then transfer to a wire rack. Slice after fully cooled.
Notes
No need to blot zucchini for moisture as recipe compensates for it.
Chocolate chips and nuts are optional; adjust to dietary preferences.
For vegan version, substitute eggs with flax eggs (1 flax egg = 1 tbsp ground flax + 3 tbsp water) and use chopped nuts instead of chocolate chips.
