Description
Sweet and savory breakfast skewers combining the cozy flavors of cinnamon rolls with the portability of bite-sized morsels. Made with almond flour, erythritol, and a cream cheese filling, these guilt-free skewers are perfect for breakfast or brunch.
Ingredients
1 cup almond flour
4 1/2 tablespoons erythritol
1 1/2 teaspoons baking powder
1 1/4 teaspoons ground cinnamon
1/4 teaspoon cream of tartar
1/8 teaspoon sea salt
1 large egg, beaten
1/2 teaspoon vanilla extract
2 1/2 tablespoons melted coconut oil
1/4 cup cream cheese, at room temperature
Instructions
Preheat oven to 375°F (190°C) or grill to medium-high heat.
In a medium bowl, whisk together almond flour, erythritol, baking powder, 1 teaspoon cinnamon, cream of tartar, and sea salt.
Add egg, vanilla, and 2 tablespoons melted coconut oil. Mix until a soft dough forms.
On a sheet of plastic wrap, roll the dough into a small cylinder (about 8 inches long). Wrap and refrigerate for 10 minutes.
While dough chills, mix cream cheese and remaining 1/4 teaspoon cinnamon in a small bowl.
Slice dough into 1-inch rounds. Thread 3-4 rounds onto wooden skewers with a teaspoon of cream cheese filling in the center.
Place skewers on a baking sheet and brush remaining coconut oil over the tops.
Bake for 6 minutes or grill for 5 minutes per side until golden.
Notes
For vegan version, replace egg with a flax egg (1 tbsp ground flax + 3 tbsp water).
Replace coconut oil with avocado oil if needed.
Can be assembled ahead and refrigerated until baking.
Optional: Sprinkle sugar-free cinnamon sugar over the skewers before baking.
