  • ½ cup (115 g) unsalted butter, melted
  • ¾ cup (150 g) granulated sugar
  • ½ cup (65 g) all-purpose flour
  • 2 cups (480 ml) milk, lukewarm
  • 1 teaspoon vanilla extract
  • 1 cup (80 g) sweetened shredded coconut
  • Pinch of salt
  • Powdered sugar, for dusting (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch pie dish or baking dish.
  2. In a large bowl, whisk the eggs until light and frothy.
  3. Add the melted butter, sugar, flour, milk, vanilla extract, and salt. Whisk until smooth.
  4. Stir in the shredded coconut until evenly distributed.
  5. Pour the batter into the prepared pie dish.
  6. Bake for 45–55 minutes, or until the top is lightly golden and the center is just set.
  7. Remove from the oven and allow the pie to cool completely. Chill for at least 2 hours for the best texture.
  8. Dust with powdered sugar before serving, if desired.
