- ¾ cup (150 g) granulated sugar
- ½ cup (65 g) all-purpose flour
- 2 cups (480 ml) milk, lukewarm
- 1 teaspoon vanilla extract
- 1 cup (80 g) sweetened shredded coconut
- Pinch of salt
- Powdered sugar, for dusting (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9-inch pie dish or baking dish.
- In a large bowl, whisk the eggs until light and frothy.
- Add the melted butter, sugar, flour, milk, vanilla extract, and salt. Whisk until smooth.
- Stir in the shredded coconut until evenly distributed.
- Pour the batter into the prepared pie dish.
- Bake for 45–55 minutes, or until the top is lightly golden and the center is just set.
- Remove from the oven and allow the pie to cool completely. Chill for at least 2 hours for the best texture.
- Dust with powdered sugar before serving, if desired.
